One of the most frequent questions I hear soon-to-be, and existing, restaurant owners lament, is how much to pay a manager.

“Most” owners asking this question are working owners. After being in the business for awhile, owners start to realize that they can’t be in all places all the time, and still be able to market their business. Working “in” their business keeps them from working “on” their business. Eventually, many of them decide to hire a general manager or assistant managers. Inevitably, the same question always comes up, “What are the industry averages for manager pay?”

Much to the chagrin of the person asking the question, the correct answer to that particular question is, the industry averages are of no use to you in determining what to pay your manager.

Reinforcing and explaining that point is the intent of this article. First, I need to discuss why industry averages are of no use to you in determining manager pay. Then, we’ll discuss what you should be doing to determine what to pay your managers.

Why shouldn’t industry averages be used to determine the pay for my managers?

Every restaurant has a unique financial situation unlike any other restaurant, even if those restaurants are the same concept. Your profit and loss statement looks like no other. The combination of your rent, labor, sales, even cost of goods can be completely different from the same concept in a different location, with different employees, even if you are both McDonald’s.

Industry averages are just that, “averages”. They combine figures from small 200 square foot burger huts run by 3 employees, with that of a $1.5 million per year quick service giant with 40 employees. All the numbers from thousands of operations that are nothing like each other are lumped together to create industry averages. While these averages are great to illustrate trends in the industry, and to even compare your own restaurant against and alert you of a potential problem that needs further investigation, they shouldn’t be seen as a guide to use to determine pay. Your operation is different than any other, and more importantly, you are located in a market that is different than the market of most or all of the restaurants used in those averages.

Setting your pay based on industry averages could very well yield a situation where you are drastically overpaying, or underpaying, that employee for that job in your market. You could end up losing money for your decision, or worse, losing a great manager.

What should I do to determine what a manager should make?

Ask yourself these questions:

  1. What are the businesses paying that I am competing with for employees?
  2. What can I afford to pay?
  3. How easy is the job?

Good managers are hard to come by. Landing a great manager is probably going to require you to pay that person more than they can make somewhere else for equal work. To take the first step in figuring out what to pay a manager, you need to figure out what other restaurants in your market are paying. Those are the restaurants your potential manager will be comparing you to. Find similar concepts in the same town and look for their help wanted ads. Call the restaurants themselves and ask to speak to someone about hiring. Pretend you are in the market for a job, that you are an experienced manager, and ask what the potential for earnings are. You won’t always get a straight answer, but if you approach enough restaurants, you’ll get a good idea what everyone else is paying. The key to this being an effective strategy is to only approach businesses in your market. You are competing for employees with the other businesses those employees are likely to go to for a job. Any business too far away for that employee to drive to work to, is completely worthless for information purposes. You aren’t competing with them. You may however, be competing for employees with businesses other than restaurants that are in your market.

The second step to figuring out what to pay a manager is calculating what you can afford to pay. It doesn’t do you any good to go out and get the most incredible manager in the world, and have to pay him/her a $1,000,000 a year if your business only brings in $500,000 per year. You have to be able to afford the manager.

A good “rule of thumb” for management pay, is to keep all combined management salaries (including GMs, assistants, bar managers, chefs, sous chefs, etc.), including their taxes and benefits, under 10% of your gross sales. This is a common figure used in many business models across many industries. As with any rule of thumb, there are exceptions though.

In some instances, a restaurant can have “working managers”. These are managers that fill a position usually filled by hourly employees, in addition to having management duties. When calculating whether your salaries are affordable or not, you should only include the portion of a working manager’s salary dedicated to management duties as part of that “10%”. For example, if you have a shift manager who is also a server, calculate how much you would have to pay another server without management duties to fill the server part of that managers role. Then, subtract what you would pay that server from the manager’s actual pay to calculate how much of the working manager’s pay you should contribute to your “10%” calculation.

Another exception to the rule you might find is in particularly profitable operations with simple business models. These businesses may not have to pay out 10% of their gross sales to attract high quality managers. In their case, they just have to offer higher pay than the businesses they are competing for employees with. Lucky them.

Some restaurants will run into the dilemma of not having a large enough budget for managers when they only use 10% of their gross sales. One option to come up with a more attractive compensation package for these restaurants is to offer a profit sharing bonus structure based on sharing any profit above the minimum profit the restaurant budgets. While the 10% rule of thumb should normally include taxed AND benefits, a profit sharing bonus structure gives you a little flexibility because it is based off potential profit above the budgeted profit. Any part of this “extra profit” is affordable for you to share because it requires the restaurant to be profitable before there is any sharing, and it also requires that you already make the minimum profit you’ve budgeted for. This also incentivizes the employee to earn you more money so they can make more money themselves.

Based on the 10% rule of thumb, you should have a good idea now what you can afford to pay a manager.

The last consideration is the complexity of the job you are hiring a manager for. Not all manager positions are equal. In a restaurant with a working owner who does all the marketing, bookkeeping, hiring and firing, a manager’s job may be fairly simple. They might just be there to watch the floor and help count the registers. You should adjust what you’re offering accordingly, and you should also be very forward about the complexity, or simplicity, of the job when you are interviewing potential managers. You want applicants to be comparing you to other management positions knowing full well what you expect in a manager.

Other factors that make a manager’s job more complex or simple include:

  • How organized your business is
  • The hours you expect from a manager
  • The flexibility needed from the manager
  • Whether you are a working owner or “hands off”
  • Staff turnover and the resulting demand on the manager
  • Whether there are “re-structuring” tasks to be done and whether or not the manager will help
  • Whether the manager is also helping market the restaurant
  • How much work is required of the manager “outside” the restaurant itself, like catering events or participating in expos and festivals

Just as you would expect yourself, the more you require from a manager, the more you will have to pay that manager to keep them happy. Creating a job description for a manager is a great way of communicating all that you expect from that manager, so you can be up front during the interview process and give them the necessary information to compare a management job with you to a management job with your competitors.

If you do your part by figuring what others in your market are paying managers, what you can afford to pay, and whether your manager position is harder or easier than the ones you are comparing it to, you should be able to come up with a reasonable salary for a manager that keeps them happy and you profitable.

The story will start from afar, I’ve done a lot, so it can be called a long.

I started my acquaintance with the console, as well as with Nintendo in general, at the end of 2018. Then I didn’t have any consoles at all, and before that I had psp (which I gave to my friend, and he sold it without my knowledge), psvita (which I sold too early, regretted it and bought a flashed one years later), and ps2, by accident left to me by my uncle at the end of the 2000s (which I left in my native village as unnecessary, and my parents simply gave it to someone there when they moved). There was only a semi-dead PC on which I somehow played at minimum wages in 30% of new games and comprehended the indie section as best I could. By the new year, I saved up some money as a student and wanted to buy myself a console. There were several options: buy a flashed ps3; buy a flashed nintendo 3ds; buy nothing and save up for a ps4. The choice fell on the Nintendo 3DS.

Who is this?

Nintendo 3DS is the eighth generation handheld console of the “guess which” company, the same generation as the PSVITA. In fact, it is an improved version of the previous generation console – Nintendo DS, only with more powerful hardware, a left stick, higher screen resolution, thereby 3D, as well as additional triggers and a right non-stick on later versions of the console with the prefix New in the name. The console sold well, on par with the PSP, but it was not destined to overtake her father in the face of the DS. 76 million versus 154 million. PS4, according to Wikipedia, sold 117 million, and here 154, fucked up.

Why did I buy it then?

1) A desire to learn more about Nintendo.

At the time, none of my friends understood why I chose the Nintendo console instead of, oh my god, the legendary ps3 and ps4. And no wonder, none of us knew anything at all about Nintendo consoles, its games, history, features, etc., we didn’t give a fuck about what kind of animal this was and what to do with it. I sometimes heard about Nintendo from Zakhar Bocharov on podcasts, he is a longtime fan, and from Alexei Shentsov aka itpedia, an ardent hater of Nintendo, most likely to this day. One rarely spoke about Nintendo and their games (well, or I just listened to him inattentively), the other devoted entire videos to his hate, where he simply slandered her and her products out of the blue as best he could, mostly without any adequate explanations and facts. Listening to the two of them, I didn’t have a single opinion about Nintendo in my head, and I thought about it when the choice of buying a console came up. Nintendo was a deep forest for me and I wanted to learn more about it, not just read articles and watch a bunch of videos, but become a part of it, become the owner of the console. With ps3 and ps4 the situation was different, I knew exactly what awaited me when buying, what quality and direction the games would be. I was already the owner of Sony consoles and there were no surprises for me, but with Nintendo I will close the question for myself and play completely new games for myself. In my win.

2) Get a new gaming experience.

Nintendo, unlike its direct competitors in the face of the Game Station and Xbox, with each release of its console, tried to create something creative and innovative in terms of the controller. Most often, these innovations were accompanied by good sales, so why not continue to be creative?

Nintendo 3DS had more than enough of this creativity for me. A clamshell console, two screens, one of them is touch screen, a stylus inside the console, sliders on the sides of the screen for sound volume and depth of the 3D effect, 3D without glasses, the second stick in the form of some kind of gray button above the ABXY buttons. After that, psvita with its fucking rear touchpad, which was either not used anywhere, or simply interfered with the game, looks like a loser. In general, the features of the 3DS attracted me and I wanted to try them out live.

3) Portable console.

It so happened that at that time I could not play freely on my aforementioned PC, only a couple of days a month. But I had an old laptop for study, so it wasn’t that bad, right. The same would have happened with ps3/ps4 if I bought them instead of 3DS. So that was the deciding factor.

What can I say…

Over the past 4.5 years, I can confidently say this: this is my favorite console. In terms of return, neither psp with psvita, nor switch, nor even ps4, which I bought a year after 3DS, could get around.

PS4 is a wonderful console. A box that produces a quality graphics like tlou2, it has a lot of cool games that I have completed, I have completed Bloodborne 5 times and I do not mind the sixth) But there is something that distinguishes her games and 3DS. PS4 exclusives are very similar. They are of high quality, but they almost never surprise you, you always know what to expect from them and it seems like they are counting on it. The people get, for God’s sake, their sony kintso, get high from the graphon and verified gameplay, see some development of the old mechanics and everything. No experiments, no risks, everything goes according to plan. Of course, there are exceptions, such as Fumito Ueda’s games, but for the most part Sony exclusives are described that way.

Okay, digression is over, I’ll tell you a little about the functionality of the 3DS. 3D works in 99% of games (I don’t remember any where it wouldn’t work). The bottom screen here is not an additional screen, but the second working screen, you will constantly use it. There are even games where you will only need to use it and a stylus. There are Nintendo DS games that require you to hold the console sideways like a book to play, which is actually handy. Surround sound from the speakers, which is an order of magnitude better than that of the same psvita. But, in fairness, it is worth mentioning that right stick-button, which only owners of certain versions of the console will meet (and there are only 7 versions of the 3DS, this is not a fat slim pro for you). This stick is very strange, it is not to say that it is inconvenient, but in an emergency it will certainly be a loss. It does not move, it reacts to the force of pressing along the edges with a finger. It feels like a pencil eraser has been hammered into the console. The games that support it can be counted on the fingers of two hands. I have also hardly seen any games using a gyroscope, except for two zeldas.

In addition to all the styluses sticking out of the glasses, I would like to tell you about the software features of the console. For example about statistics. If you, like me, love to jerk off to recordings of your activity like “how many hours did I play this game”, “when did I first launch that game”, etc., then 3DS collects and gives it to you in all details and in in a very convenient form, not a single console or even Steam gave me such a convenient diary with a diagram. In addition to the chart with the time intervals of my gaming sessions, the console collects, all of a sudden, the number of steps and scatters them on a similar chart. For steps, the console gives the user a certain currency that can be spent in some games, such as Animal Crossing. How disappointed I was when I saw that this was not on the switch, just a disgrace.

A feature that we can only hear about and never use: 3DS consoles, with the wireless mode turned on, exchange information when they are nearby. Or to put it another way, the created avatars on the consoles visit each other. I have absolutely no idea what it actually looks like, but it just sounds awesome. I wanted to ride to and from work with the console turned on to catch the same fool with the 3DS, but I have problems with the battery and it runs out in an hour of play, and it’s unlikely that there will be the same owner of a retro console in my fart, not in the capital I live. But the very fact that there is such an opportunity, such an idea, is surprising. The Japanese came up with something very strange, but this time very cool.

amiibo figurines. Surely you have heard or seen them, but did not know what they are and why they are needed. “How is it why?” – you ask, “This is a figurine! It should stand in a conspicuous place so that I admire it.” That’s true, but the amiibo figures are too small and cheap, and therefore less detailed. Of course, there are fans, I somehow wanted to buy myself a Fire Emblem figurine, but when I saw the faces of the heroes, I suddenly didn’t want to) These figurines have a second function, they can be scanned using different Nintendo consoles, including 3DS, and receive in-game bonuses , such as the corresponding fighter in Super Smash Bros.

There is also a simple drawing mode in which the previous owner of the console left someone’s portrait. I tried to repeat, but alas, I can’t draw, so I did something of my own)

It turned out to be some kind of bum.

About the main thing

Ohhh… I spent too much time talking about the possibilities of the 3DS, which will be used by 3 cripples. Finally, let me tell you about the main thing:

Performance : I played a huge number of games on my 3DS and I noticed a drop in fps exactly once. In Ocarina of Time there was a dungeon where you had to swim through the tunnel on the ship. I stood on it, it floated, and then a slight drawdown suddenly began. Seeing this, I decided in a split second to turn on 3D in order to load the console even more and see what happens. Well, there were 20 frames, it did not last long, the tunnel was short. I have never seen drawdowns anywhere else, all games work like clockwork.

Convenience : I bought a used console, the previous owner used it for about a year and a half (judging by the statistics that remained from him). Its condition was excellent, except for a couple of almost imperceptible scratches and a slightly wobbly screen, but since it staggers exactly the same after years, I think this is the norm for all consoles, albeit unpleasant. Immediately I want to kiss the hands of the people responsible for the cross, my second favorite after the Xbox Series cross. Passing Cave Story, Gunman Clive and Shovel Knight on it was a pleasure. The ABXY buttons are also pleasing, because of the folding shape of the console, the buttons have a minimum height and practically do not stagger. Like the D-pad, the buttons are responsive to press. Perhaps they will be small for large hands, but in mine it was just right. The rear triggers are just fine, they don’t cause delight, but I can’t scold them either. We also need to mention additional triggers on New versions of the console – they exist. Know about it, otherwise I myself sometimes forget.

ZL and ZR, I use it only in the console menu sometimes when I remember that there are such buttons at all.

Sticks : Everything is clear with the right one, added for fun just for the sake of experiment, fuck it. The left one is generally not bad, although the finger constantly slides on it, which sometimes infuriates. Playing most games on it is easy for me, but for example in Metroid Samus Returns it really hurt me. I’m not used to playing platform games on a stick, and even such a flattened one. 2 years after the purchase, his rubber hat fell off the stick, but without tears and other things, so I calmly put it back on the glue for a moment. In general, I have no complaints.

But I have a complaint about the back cover of the console. But in general, none of these games has become one for which I return to the console again and again. So this will just be a list of my favorite games on the 3DS.

This game captivated me, though not immediately, far from immediately. There is no Russian language in Animal Crossing and it was quite difficult for me to start the game. In addition, the game itself interfered, or rather its “rules of the game.” I just didn’t understand what to do in it, wandered around the half-empty city and thought, “Did I translate something incorrectly and didn’t understand what to do, or is it supposed to be like that?” That’s the way it should be. Animal Crossing doesn’t need to be played for long sessions, it’s a game that you enter for an hour or two, complete daily tasks that you set for yourself, communicate with residents, farm and exit with peace of mind. The game has a huge amount of content, but the game is tied to real time, that is, if you have Friday 13 December 22:45 outside your window, then Friday 13 December 22:45 is also in the game. The content is spread over the whole year, playful and real at the same time. There are both ordinary sellers of everything who appear on a random weekday from 8 am to 2 pm, and special guests who appear for a couple of days a year, on some holidays. The game is very good and addictive for a long time, but eventually gets boring. I usually go back to it after six months and it sucks me back. Half of the residents have moved, the second has already forgotten how I look and thinks that I’m dead. New residents have moved in and they know about me only by hearsay. The whole city is overgrown with grass, you need to clean the forks . .. that is, with your hands. In general, every time I returned to Animal Crossing after a long break, I understood: they were waiting for me here (especially Tom Nook).

Fire Emblem Echoes Shadows of Valentia

Today, this series of games is known to many for Three Houses on the Switch, but there were many more games in the series before it, three of them were on the 3DS. I’ve always loved turn-based combat with lined cells, like in XCOM. Not like in Divinity, it’s completely different, but like in Into the Breach, like in FF: Tactics. But the problem is that I don’t know how to play strategy at all. And for me, passing FE on the norm without death was a test. In the second half of the game, I sat for hours on one fight, so that the main character would fuck up somewhere and I had to start all over again. Of course, besides the combat, I really liked the story and its characters. The adventure of Alma and Celica, whose paths either converge or diverge. It’s still an anime, of course, but it was interesting to watch.

The answer to a silent question: why Shadows of Valentia, and not Awakening, the part that was rated the highest in the series? First: Valentia translated into Russian. I didn’t have to sit for 40 hours with Google translator and fuck my brains what the hell did this character say and what was it about. Secondly: Valentia is easier in terms of mechanics or in some places it is different. I really liked the mechanics of magicians, when using spells, they take away lives. That is, there are no separate mana points here, you need to keep track of this in protracted battles both for yourself and for the enemy. Also, weapons do not break here like in Awakening. Archers are more awesome. But there is no partner mechanic, here each unit is for itself, which is a shame. Thirdly, no matter how ridiculous it may sound, it is more graphic. All the lines of the characters are voiced in it, more cutscenes. The game has dungeons in which you can walk from a third person and how to clear levels in a person. When at the very beginning of the game they put me small in a flower field and I press the right stick and it works, the camera spins, and Celica is waiting for me in the distance, well, it was wow fucking next-gen technology on the 3DS. I don’t remember if it was really possible to use additional triggers then, the main thing to remember is that they exist, they are with us in the same console.

The beginning of the day, we choose what we will do this day, the main character does it, pumps stats, some events may happen to him, evening comes, we move on to the next day and so on in a circle until victory.

The second part of the game: you started dating your chosen one and now you have to raise the level of your relationship higher and higher. Go on dates, talk on the phone, hide in secluded places at school, walk to and from school together. But now with reference to real time. Made an appointment for the weekend? Kindly enter the game on time and not be late, otherwise the girl will be offended by you. Are exams in full swing at school? Forget about dating in general, but it’s better to start entering the game yourself every day and give him the task of studying so that he passes the exams normally.

Moreover, in the first half of the game there are moments where you have to say something into the microphone, in Japanese, of course, but the translators are not stupid either, at such moments they left transcriptions of phrases somewhere on the screen.

I would also like to tell you about the mechanics of kissing in the game, which is devoted to a whole tutorial in the game. True, it didn’t help me fucking and I had to climb into the English-language guides to understand how in general. There will be moments in the game when the girl just stands still, waiting for something and the stylus icon is lit in the corner. This means that you need to touch it, but where? Nobody will say. Touched successfully – the camera is approaching the face, now touch the face. Where? Heh, you’re funny. Read guides. Then you need to drive the stylus across the face and save hearts, then kiss her in different ways depending on her face and reaction, these are cunts guys. I think it’s easier to kiss in real life than in this game, by God. And when your relationship is at its best, she wants to kiss all the time and this long mini-game is fucked up. There is even a hack for quick kisses in a pirate girl, it’s so fucked up. But even with them, this is a wonderful game with many small details and possibilities, the girls change their hairstyles and ask if you like them, you can go to all sorts of events with them, the game is very interesting.

Mario Kart 7

Yes, I kind of said above that Mario games didn’t hook me, I fucked up, it’s DTF, accept it. I was never a fan of racing, I always had enough for a couple of hours and I dropped. The exceptions were NFS Carbon on the PSP, I played when I was a schoolboy, but I never finished it due to the high complexity for me and the lack of the Russian language, and DiRT Rally, I still return to it from time to time. Mario Kart hooked me first of all with its simplicity and dynamism. There are a lot of mechanics that I haven’t seen in regular races, such as the boost from being behind an opponent, or the boost from pressing the jump button on a trampoline or slide. In general, there is no training in the game, so before all the mechanics you have to figure out for yourself how to drift, how to throw shells, how to defend yourself from these shells. In addition to the usual cups, the game has an arena mode where you need to beat each other with cars, but it didn’t work for me. And so Mario Kart is an exemplary arcade race, fun, relaxed and easy to learn.

But when I went to high difficulty, that’s where the game changed. Bots just suck. You can easily get from the first place to the last one in seconds and back in the same way. The game is dominated by frequent randomness. And when you remember that you also need to collect coins in order to close the cup with three stars, it’s generally an ass. The game for me has gone from being a “fun and relaxed arcade racer” to something like Twisted Metal. The soundtrack in the game didn’t fit the fuck that was happening on the road, so in Mario Kart I usually played songs by Slipknot, Rammstein, Linkin Park and the like.

Never knew how to play fighting games, that’s all. As a schoolboy I played Mortal Kombat 9 with friends, but none of us really understood how to play it, we just beat each other up and had fun. I honestly don’t know what prompted me to put Tekken on the 3DS, and even more so not to score on it after installation, because I had never played Tekken before, I only saw my uncle playing it on ps2 a couple of times.

I don’t go online on the 3DS at all, and therefore my destiny is to play only with bots, but I was such a noob in fighting games that it suited me completely. I poked around in training with a couple of characters, I chose Alice for myself, since her attacks are fast and basically do not require double directions (left + down or right + up). I started playing arcade games in my spare time and got hooked. I did not have time to come to my senses, as I had already fought 700 battles and sat on the penultimate difficulty (very hard).

Actually Tekken 3D: Prime Edition is Tekken 6 with cut out story mode and added game mode which is some kind of shit, I don’t even remember what it’s called, remember. Instead of a story mode, a whole animated film was inserted into the game, but it was cut out on a pirate, so I didn’t watch it) Naturally, I played only with bots, and bots here, in comparison with bots from Tekken 7, are complex. If in the seven on the last difficulty I calmly knocked out the last rank in 200-300 battles, then here, after 1000+ battles, I’m still on Jaggernaut (or whatever it is) on the penultimate difficulty and bots sometimes give me hard cunts. Playing Tekken on the 3DS is convenient, the console has a very comfortable D-pad and responsive buttons, which helps you keep control of the character to the maximum. I’m not sure what kind of 2D fighting games with their semicircles will be played on it, but in Tekken, where this, thank God, is not, I was comfortable.

What is the result?

I won’t say that I’ve been using it all these 4.5 years and it never left my hands, of course I gave up on it. It happened for a couple of months, once it was for six months. But every time I thought “if only I could return to Animal Crossing, I’ll start planting flowers again”, “Damn, I haven’t played so many good games there yet, as many as 4 metroids are waiting, this major mask, oh damn. ” I remember other consoles much less often, and I don’t launch them at all. Today this is my favorite console, in terms of games, in terms of ease of use. And what it looks like when folded, guys, it’s just sex. I never would have thought that I would focus on the appearance of the console, but I really like the 3DS.
