Iberian ham

The geographical uniqueness of the product, which will be missed by all Russian grocery stores, is explained by the fact that for its production the hind legs of pigs of a certain breed are used, which are fed with acorns of holm oaks for 5 years. And if the Iberian pig can be relocated to another country, then holm oaks do not take root either in Italy or in France, where attempts have been made to plant them repeatedly. They grow only in southwestern Spain on an area of ​​1.1 million hectares.

The most famous ham factory, Cinco Jotas, is located 100 km from Seville in the town of Jabugo (province of Huelva) in the heart of the Sierra Aracena and Picos de Aroche Natural Reserve. This is a place with a unique microclimate: dry days and wet nights, with hot summers and cold, but without snow and frost, winters. Since 1879, 100% pure Iberico de Bellota jamon (Cinco Jotas Bellota) has been produced here. The main square of Habugo, a city surrounded by oaks, chestnuts, pines and eucalyptus trees, is called “Jamon Square”, in honor of the masters of the art of cutting, a “Monument to the maestro-jamonero” has even been erected here.

Habugo jamon is recommended to be stored in a dark and cool place at 10 to 15°C and cut at 20 to 25°C. First, a thick layer of skin must be removed from the ham in such a way that, at the end of the cut, cover the cut with it. You need to cut exactly as much jamon as you are going to eat at a time, and if there are still half-eaten slices on the table, they should be wrapped in cling film or wax paper to prevent long contact with air.

At the Cinco Jotas factory, you can buy both a whole leg and a jamon hand-cut by master cortadores. There is also a special ritual for sliced ​​jamon – before opening the package, you should immerse it in warm water for a few seconds, and after opening, spread the jamon on a plate and leave for 15 minutes at room temperature (the ideal temperature for proper use of jamon is 24 ° C) .

The most spectacular part of the holiday is the championship, which begins at seven o’clock in the evening of the last day and continues until late at night. Oysters should be opened with a special knife, in addition to quantity and speed, the jury also evaluates the elegance of eating. Oysters for the competition are carefully selected – each of them must be at least 76 mm in diameter.

Norwegian cod

The main attraction of the islands is the World Cod Fishing Championship, which traditionally takes place in the town of Svolvaer in early March, at the height of the spawning of Arctic cod, which comes to local waters from the Barents Sea from mid-February to early April. There are two types of arctic cod – stationary migratory (moiven) and oceanic migratory (skrei), participants of the competition, of course, catch skrei. They fish from schooners, which, at the command of the judge, go out to sea, stopping not far from the coast, and start catching fish from a depth of 80 to 120 meters using a rod. At the end of fishing, the total weight of the catch of each schooner is weighed. The largest skrey caught at these competitions weighed 27 kg. In addition to catching fresh cod and tasting dried cod, which is the symbol and main delicacy of the islands, in winter you can go skiing with a view of the fjords, go in for ocean rafting, diving, snorkeling and even surfing.

Piedmontese truffle

In addition to trading, the festival hosts numerous tastings where you can taste local wines, cheeses, sausages and honey, as well as truffle search tours, and theatrical performances and costumed performances take place on the streets of the city for a month. Swiss cheese

The start of cheese production usually takes place from June to September, when the milk from alpine cows is at its best. In total, there are about 70 types of Gruyere, the most popular are sweet (aged 5 months), semi-salted (7-8 months), salty (9-10 months), premium Gruyère (12 months) and old Gruyère (15 months). On average, a kilogram of Gruyère at the factory costs about 20 francs, and here you can visit an inexpensive restaurant that prepares dishes based on it – for example, De Chateau cheese soup with potatoes and pickled cucumbers, fresh vegetable salad with pink sauce or fondue, for the preparation of which Gruyère is ideal. You can walk from the factory to the city castle located on the mountain in 15 minutes – in addition to the central square with a chapel and panoramic terraces with stunning views, in Gruyère it is worth visiting the Giger Museum – the author of creatures from the movie “Alien” – and buying something from furniture made in the characteristic style of fantastic realism.

Parmesan

Parma is a city in the Italian region of Emilia-Romagna, founded by the Etruscans around the 8th century BC. e. and conquered by the Romans in 183 BC. e. But the city became famous all over the world thanks to the delicacies to which it gave its name – Parmesan cheese and Parma prosciutto ham. In the vicinity of Parma, there are three gastronomic museums at once – the Parmesan Museum, the Prosciutto Museum and the Tomato Museum. The Parmesan Museum is a homemade cheese factory with a small museum located in the town of Soragna, you can get there by bus from Parma. The museum exhibits tools for the production of parmesan and a large collection of special knives for splitting it.

The cheese entitled to be called Parmesan can only be produced in Parma, Modena, Reggio Emilia and also in some places in Bologna and Mantua, using traditional methods and without the use of preservatives. Parmesan is produced only in the morning, once a day, 365 days a year. To produce one kilogram of parmesan, 16 liters of milk are required – half of them are taken from the morning milk (whole), half from the evening (partially skimmed). Parmesan spends 20 days in brine, ripens from 12 to 36 months at a temperature of 18 ° C and humidity of 80%. There are three types of parmesan: Parmigiano Reggiano Mezzano (12 months ripens), classic Parmigiano Reggiano (24 months) and Extra (36 months). After ripening, a representative of the Parmigiano Reggiano Cheese Consortium checks the quality of each head by tapping it with hammers and determining the structure of the cheese by vibration and sound.
