Buy fresh
Try to find chilled rather than frozen hearts on sale. In the freezer, chicken hearts can be stored for no more than two months.
Pay attention to the appearance of the product – a good quality heart should be dark red in color, smooth and elastic, with white fat and no signs of dents.
Process and rinse well before cooking.
Cut and clean the hearts from the remaining blood. Get rid of excess fat, vessels and films to improve the taste and appearance of the future dish.

Chicken hearts are one of the smallest by-products. In length, the chicken heart reaches 3-5 cm. The mass of a chicken heart is three hundredths of the weight of a chicken carcass, given that carcasses weighing 1.2-1.5 kg are mainly offered in the distribution network, then on average one heart weighs 25- 30 grams. The fresh product has a dark red color and a very dense structure. When buying, it is better to choose chilled chicken hearts rather than frozen ones. Before cooking, raw chicken hearts must be washed, blood clots removed from the chambers, and fat cut off from the tops. They can be cooked whole or cut into two halves.

Application
Chicken hearts can be used to make soup – with beans, pasta, mushrooms, rice or millet. They can be boiled with spices and salt and served with sauce or pasta, or boiled hearts can be used to prepare various salads. But fried hearts are considered the most delicious – there are dozens of recipes for their preparation. They are fried with onions, carrots, eggplants, in batter and breadcrumbs. Chicken hearts also contain many macro- and microelements, such as phosphorus, potassium, magnesium, iron, zinc, copper.
