This naturally green eggs and ham recipe is a hit with kids and perfect for a Dr. Suess fan, or as a simple St. Patrick’s Day breakfast. And it’s totally dye-free!

The words of Dr. Seuss are truly iconic, and kids across the country have yelled countless times at poor Sam I Am.

“I do not like green eggs and ham, I do not like them Sam I Am!”

If you haven’t yet made green eggs and ham for your child, you have to try this green eggs and ham recipe. You’ll never forget the delighted look on their face as they see a storybook favorite come to life.

GREEN EGGS AND HAM WITHOUT FOOD DYE

Growing up, my mom would make a green eggs and ham recipe using blue food dye, and I was thrilled every single time she made it (usually for St. Patrick’s Day breakfast).

While I haven’t noticed any harm done to me through consuming food coloring, I try and use natural ingredients whenever possible when feeding my family.

I’m also always looking for more ways to get kids to eat vegetables, so decided to experiment with a few different green vegetables to try and create a naturally green eggs and ham recipe.

After playing around with blending kale, chard, broccoli, peas, and spinach with eggs, I found that spinach is differently the favorite green eggs ingredient for our family.

Spinach is actually quite sweet for a vegetable, with a much milder flavor than other greens like kale and chard. It also has a softer texture and cooks down quite a bit, so it blends into the eggs much better than peas or broccoli.

HOW TO MAKE GREEN EGGS AND HAM

  • Heat slices of ham in a microwave safe dish for 30 seconds. Keep covered.
  • Crack 8 eggs into a blender and add 2 cups of baby spinach.
  • Blend until the spinach is completely incorporated and it looks like a green smoothie.
  • Pour eggs into large nonstick pan on medium-high heat.
  • Use a silicone spatula to gently scrape up the eggs as they cook, pushing them to the outside of the pan, and letting the uncooked portions run toward the center.
  • When the majority of the eggs are still just slightly wet, sprinkle with salt and pepper, give one more gentle scrape and stir of everything, then remove them from the pan.
  • Serve a scoop of green eggs with a side of warm ham.

TIPS FOR MAKING GREEN EGGS AND HAM

  • Don’t turn the heat up too high. High heat leads to dry, scorched eggs, especially with the spinach blended in. The recipe says to cook it on medium-high heat, but if you have a gas burner, you will likely need to use medium or medium-low.   • Adjust the spinach amount as needed. This recipe is really flexible. You can add up to 1 cup of baby spinach (not packed down, just lightly packed) per egg. You can also add less spinach than the recipe calls for. If you don’t like the hint of spinach taste, try adding a little sprinkling of grated parmesan when you add the salt and pepper.

Instructions

  1. Heath a large nonstick skillet or griddle (with a rim) on medium heat.
  2. Place ham in a microwave safe dish with a lid and heat for 30 seconds. Leave covered until eggs are ready.
  3. Crack the eggs into a blender and add the spinach.
  4. Blend on low, then high speed until the spinach is completely incorporated into the eggs and everything is green.
  5. Pour the blended green eggs into the skillet (or griddle). 
  6. Use a silicone spatula to gently scrape up the eggs as they cook, pushing them to the outside of the pan, and letting the uncooked portions run toward the center.
  7. When the majority of the eggs are still just slightly wet, sprinkle with salt and pepper, give one more gentle scrape and stir of everything, then remove them from the pan.
  8. Serve a scoop of green eggs with a side of warm ham. Green juice is optional!

But if your appetite reacts to green meat with a resounding “yikes!” like ours do, try this less literal recipe, which checks the “green” box with lots of fresh kale that gets nice and crispy on top in the oven.

What eggs are best for green eggs and ham?

Any time that you’re making a recipe in which eggs are the star ingredient, it’s a great idea to splurge for the best eggs you can find. If you’re lucky enough to live near a farmers’ market or have neighbors with chickens, fresh eggs are awesome in this dish. Second to that, look for eggs in the grocery store that are from free-range, organically fed, or hormone-free chickens. Again, regular eggs are just fine, but good eggs make this dish even better.

What ham is best for green eggs and ham?

This recipe calls for breakfast ham slices or Canadian bacon (which is technically ham) that are cut into thin, 3-inch-round slices. If you can’t find those at the supermarket, you can use a round cookie cutter to cut out circles of thick-cut deli ham, or substitute leftover ham, about 4 ounce or 1 cup diced.     heavy cream

    grated sharp cheddar cheese, divided

  • 1/2 c.

    grated Parmesan cheese

    chopped mixed herbs, such as chives, thyme, and parsley, plus additional for garnish

Directions

    1. Step 1Preheat the oven to 350°. Remove the tough stems from the kale and tear the leaves into large 3-inch pieces. Place the kale in a large bowl; drizzle it with olive oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Using your hands, scrunch the kale until it is slightly crushed and softened, about 1 minute.
    2. Step 2Spray a 10-inch cast-iron skillet with nonstick cooking spray. Place the kale in the skillet in an even layer. Tuck the ham slices into the kale. 
    3. Step 3In a medium bowl, whisk the eggs until the yolks and whites are combined. Stir in the heavy cream, 3/4 cup of the cheddar cheese, parmesan cheese, herbs, and the remaining 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
    4. Step 4Pour the egg mixture over and around the kale and the ham. Sprinkle with the remaining 1/4 cup cheddar cheese. Bake until the egg mixture is set, 40 to 45 minutes. Garnish with additional herbs, if desired.

To make this breakfast you will need:

Separating the yolks

Start by carefully separating the yolks from the whites. There are several ways you can do this. For example, you can break an egg in the palm of your hand and let the whites seep through your fingers.

Another way is to slowly pour the yolk from one half of the eggshell into the other until all the white is gone. Then your hands will be clean. And if you have an egg separating tool, the process will be even easier. Use any available method. However, be careful not to break the yolks.

If you want to make multiple eggs, it’s best to pour each egg white into its own bowl or cup. And the yolks can be kept all together in one container, since they are easy to separate.

Coloring the yolk

If you didn’t separate the yolks and whites with your hands, now is the time to lightly brush your hands with a little egg white. If this is not done, the yolk will stick to your hands and burst. Then our funny children’s breakfast will not work.

Add a couple of drops of green food coloring to the yolk and gently roll it between two hands until the color is evenly distributed. Check that the yolk is completely dyed.

To intensify the color, add more dye. But try to use less yolk so that the membrane does not burst. You can keep the colored yolks all together in one bowl until ready to use.

Making a colorful breakfast

Spray a skillet with cooking spray and heat over medium heat until lukewarm. Don’t heat the pan too hot or the eggs won’t cook evenly.

When the pan is hot, pour one of the egg whites into it, then carefully separate one yolk and spoon it into the center of the egg white in the pan.

Be careful not to burst the yolk. During cooking, add salt and pepper to the eggs to taste. You can add it right away if you like, but I recommend waiting until the eggs are done.

Cook the scrambled eggs for about 2-3 minutes until the whites are completely opaque. After that, carefully remove the cooked egg from the pan with a spatula and transfer to a dish.

If you are a brave housewife, you can cook more than one egg at a time. This is a little dangerous and requires skill, because if you only burst one of the yolks, you will spoil the whole beauty of the dish. Of course it won’t be completely spoiled, it will still be a delicious scrambled egg! You just won’t have that perfect green yolk that we wanted to surprise the kids with.

Serve and enjoy!

Your plate of green eggs is ready. In addition, you can fry a couple of toasts and put fried bacon. I personally love dipping my toast in yolks. The insides of the yolks will still be golden, since the color will remain exclusively on the membrane. As soon as the yolk bursts, the scrambled eggs will become the most ordinary.

You can use other colors when coloring the yolk. You can even cook a whole rainbow for breakfast for children. They will definitely appreciate your efforts!

Pancakes with colorful sprinkles

Another fun breakfast option for kids, pancakes with colorful sprinkles! This is also used when baking Easter cakes. Perhaps she stayed with you after the holidays.

To make these pancakes, crack two eggs into a large bowl. Then beat them with a whisk for a few seconds.

Now let’s add a quarter cup of sunflower oil and half a cup of milk, and then mix very well with a whisk. Then you need to add flour (1/2 cup) and mix it again with other ingredients.

Next, extinguish the baking soda on the tip of a teaspoon with a drop of vinegar and mix it into the batter. When our dough is ready, it’s time to bake pancakes.

Preheat a frying pan, spray some cooking spray on the bottom. Then, with a ladle or a deep spoon, collect the batter and pour it into the middle of the pan, tilt it in different directions, distributing the dough over the surface.

Now let the pancake fry for a few minutes until you see small bubbles. Flip the pancake with a spatula and cook the other side. The other side will take less time, about 1 minute or so. It is done! Put this pancake on a plate and cook the rest.

Stack the pancakes on top of each other, make a small swirl of whipped cream and top with sprinkles. You can enjoy your holiday breakfast!

Cute Pancake Bear

To make a pancake bear, place two small pancakes on a plate one side of the other, these will be the ears.

Place a large pancake on top of two small pancakes, covering just over half of them. Lay the last one more small pancake on top of the big one to make a muzzle.

Now put some Nutella in a microwave bowl and heat it in the microwave for 10 seconds. Use a toothpick to draw the details of the bear’s head: eyes, nose, mouth and ears. Now your pancake is ready to surprise one little hungry person.
